Well Boat Will Reduce Therapeutant Use and Improve Sea Lice Management
St George – The Ronja Carrier, chartered from the Norwegian company Solvtrans, will be in the Bay of Fundy for the next six months to help salmon farmers control sea lice on salmon farms. Salmon will be carefully pumped from the farm enclosure into the hold of the well boat where they will be immersed in a mixture of seawater and approved therapeutant to remove sea lice, a naturally occurring parasite. Grilling infuses the salmon with smoky nuances while gentle poaching in a flavourful broth showcases salmon’s unique richness and provides a canvas for delicate saucing.
Broiling, roasting and grilling farmed salmon intensifies its flavour – try balancing the flavour with hearty seasonings, herbs and vegetables. For example, rosemary and thyme - as well as many root vegetables - go well with broiled or roasted salmon. Bold Asian flavours, like sesame and ginger, pair well with grilled salmon - whether in a sauce or a marinade.
When it’s poached or braised, salmon takes on a lighter, more delicate flavour - try delicately flavoured herbs (e.g. tarragon, sorrel) as well as citrus fruits (e.g. lemon).
